American Homemade Breakfast Sausage recipes are easy
to find, but the standard includes salt, pepper and sage.
If you wish,
you can just as easily make homemade English Breakfast Sausage (Bangers),
which contains a great deal of bread, homemade Irish Breakfast Sausage,
which uses bread and loads of garlic, or any other homemade sausage recipe
you might care to try.
You can invent your own recipe according to your
taste, of course. A word of caution on inventing your own homemade sausage
recipe: make a small amount until you're
sure you have the flavor you like.
The old time meat men usually fried
a small patty from a large batch, to ensure it was just right before
they put it on sale.
This is the recipe used for the homemade sausage
made in the photos:
- 5# of pork shoulder butt, with external fat, and some
internal fat removed.
- 2 Tb. Purified salt. Kosher salt may also be used.
- 1.5 Tb. Ground pepper
- 1 Tb. Sage (either rubbed or
ground)
- 1½ tsp. Ginger
- 1 ½ tsp. Nutmeg
- 1 ½ tsp. Thyme
